HEART HEALTHY RECIPE (LUNCH): ASIAN LETTUCE WRAPS

·         1 lb. extra lean ground turkey/chicken
·         1 medium onion, finely chopped
·         2 medium celery stalks, chopped
·         8 ounces mushrooms, chopped
·         ½ cup hoisin sauce
·         ¼ cup hoisin sauce
·         3 TBSP light soy
·         3 cloves garlic, minced
·         2 TBSP fresh ginger, grated
·         1 TBSP dark toasted sesame oil
·         ½ TBSP Asian chili paste
·         1-5 ounce can bamboo shoots, drained
·         1 can sliced water chestnuts, drained
·         1½ cups fresh bean sprouts
·         4 green onions, finely sliced
·         ¼ cup fresh cilantro, minced
·         14 crisp lettuce leaves


1.      In a crock pot or slow cooker, combine the turkey, onion, celery, hoisin sauce, soy sauce, garlic, ginger, sesame oil, chili paste, bamboo shoots and water chestnuts
2.      Cover and cook on low 6 to 8 hours
3.      Before serving add the bean sprouts, green onions, and cilantro
4.      Mix thoroughly
5.      To serve, place ½ cup of the mixture on a lettuce leaf and drizzle with hoisin sauce or soy sauce
6.      Roll the filled leaf into a pocket style sandwich
