HEART HEALTHY RECIPE (LUNCH): TURKEY AND TABBOULEH WRAPS

 ·         ½ cup bulgur wheat dry
·         1 TBSP fresh mint, chopped
·         2 scallions finely, chopped
·         ½ - 1 parsley, chopped
·         1 medium cucumber, seeded, peeled and diced
·         3 medium tomatoes, diced
·         2 TBSP extra virgin olive oil
·         2-3 TBSP fresh lemon juice
·         ¼ tsp. salt
·         4-6 large lettuce leaves
·         6-8 ounces deli turkey breast


1.      In medium bowl combine bulgur wheat with hot water and soak for 30 minutes
2.      Drain water and remove wheat to mixing bowl
3.      To make the tabbouleh, add all ingredients except lettuce leaves and turkey and stir well and set aside for 30 minutes
4.      Place a large lettuce leaf on plate, add 1.5 ounce turkey and 1.2 cup tabbouleh down the center of the lettuce piece
5.      Fold over each side of lettuce and serve
