Bran–Raisin

c. raisins
1¼
c. skim milk
3
T. vegetable oil
2
egg whites
1
c. all-purpose flour
2
tsps. baking powder
Preheat oven to 400
degrees. Line a 12-cup muffin pan with
paper liners.
In a large bowl, mix
the cereal and raisins. Add the milk,
stir and let stand several minutes. Add
the vegetable oil and egg whites; beat well.
In a small bowl whisk
together the flour and baking powder.
Add to the bran mixture. Stir
until the flour is just blended or moistened.
Evenly spoon the
mixture into the prepared muffin pan.
Bake for 15 minutes. Remove from
oven and place muffins on a cooling rack.
