HEART HEALTHY RECIPE (BREAKFAST): VANILLA FRENCH TOAST

·         ½ cup soy milk
·         ½ tsp. banilla extract
·         ¼ tsp. salt
·         4 egg whites
·         1 cup bran flake crumbs
·         8 (1-ounce) diagonally-cut slices 100%          whole wheat bread

1.      Preheat oven to 450˚
2.      Combine first 4 ingredients in a medium bowl; stir well with a wire whisk
3.      Place bran crumbs in a shallow dish
4.      Dip bread slices into milk mixture and dredge in bran crumbs
5.      Bake at 450˚ for 15 minutes or until golden brown

Servings:  8
Serving size:  1 slice toast

LAB RESULTS, HOW TO ENSURE YOU WILL GET YOURS...

Ever been to your doctor and asked for your lab results and they aren't in your chart? This is because while most office run on some type of EMR (Electronic Medical Record), those EMR's don't connect with one another.  So if you had labs done at your PCP (Primary Care Physicians) office and didn't ask them to forward them to your Cardiologist, Endocrinologist, Hematologist, etc. The only person seeing the blood work will be your PCP.

If you have blood work done at a lab such as Quest Diagnostic or a Beaumont Lab these labs will get mailed or faxed to  ONLY the ordering physician.  If any of your physicians have access to EPIC, (The EMR that Beaumont uses) then they will be able to access your records.  Unfortunately Quest labs don't have don't have a system physician's can access from their offices, so the only way a specific physician will get your results is if you tell Quest where to send them.

HEART HEALTHY RECIPE (DINNER): TURKEY BREAST CUTLETS WITH PROSCIUTTO

·         4 (4 ounce) turkey breast cutlets
·         1/8 tsp. salt
·         1/8 tsp. pepper
·         1½ ounces prosciutto, julienned
·         2 tsp. finely chopped sage
·         1 TBSP olive oil
·         3 TBSP finely chopped shallots
·         1/3 cup dry white wine


1.      Place each cutlet between 2 sheets of heavy duty plastic wrap; pound to ¼ inch thickness using meat mallet or small heavy skillet
2.      Sprinkle both sides of cutlet with salt and pepper
3.      Divide prosciutto into 4 equal portions; place one portion in the center of each cutlet
4.      Sprinkle each portion with ½ teaspoon sage and roll up cutlet, jelly-roll fashion starting with the narrow end
5.      Heat oil in a nonstick skillet over medium heat
6.      Add cutlets to pan; cook 6 minutes or until thoroughly cooked, turning and browning on all sides
7.      Remove cutlets from pan, cover and keep warm
8.      Reduce heat to medium-low
9.      Add shallots to pan, cook 2 minutes, stirring occasionally
10.  Add wine, bring to a simmer and cook for 30 seconds
11.  Serve with cutlets

HEART HEALTHY RECIPE (LUNCH): WHITE CHICKEN CHILI

·         1 lb. chicken breast
·         1 cup onion, chopped
·         2 garlic cloves
·         2 cups chicken broth
·         3 cans (15.5 ounces each) navy beans rinsed and drained
·         2 cans (4 ounces each) green chilies, chopped
·         1½ tsp. oregano
·         1 TBSP cumin
·         ½ tsp. red pepper, crushed
·         Cooking Spray


1.      Put water in stock pot with chicken breasts and bring to a boil; reduce heat and simmer 15 minutes or until chicken is no longer pink
2.      Drain chicken and set aside until cool, then chop
3.      Spray pot with cooking spray and sauté onion and garlic until soft
4.      Add chicken and the rest of the ingredients and bring to a boil, then let simmer for 30 minutes

HEART HEALTHY RECIPE (BREAKFAST): STUFFED MUSHROOM SCRAMBLE

·         8 medium Portobello mushrooms, cleaned with stems and gills removed
·         14 ounce jar of roasted red peppers chopped
·         1½ cups fresh spinach, washed
·         2 cups Egg Beaters
·         ¼ tsp. no salt blend such as Mrs. Dash Tomato Basil
·         ½ cup shredded cheddar cheese (fat free and 2% cheese mixed together)
·         ½ cup freshly grated parmesan cheese
·         Chopped tomatoes for garnish
·         “I can’t Believe It’s Not Butter” spray
·         Cooking spray

1.      Preheat oven to 450˚
2.      Place mushrooms on cookie sheet
3.      Spray mushrooms with butter spray and sprinkle with seasoning
4.      Bake for 10-15 minutes
5.      Spray a medium skillet with cooking spray and add red peppers and spinach, cooking until spinach is wilted
6.      Add Egg Beaters and cheddar cheese and cook until desired texture
7.      Place mushroom on plate and top with ¾ cup of egg scramble
8.      Sprinkle with parmesan cheese and serve with chopped tomatoes for garnish

HEART HEALTHY RECIPE (DINNER): TOFU PARMESAN

·         4 (4 ounce) turkey breast cutlets
·         1/8 tsp. salt
·         1/8 tsp. pepper
·         1½ ounces prosciutto, julienned
·         2 tsp. finely chopped sage
·         1 TBSP olive oil
·         3 TBSP finely chopped shallots
·         1/3 cup dry white wine

1.      Preheat oven to 400˚
2.      Spray an 8x8 dish with cooking spray
3.      Slice tofu into ¼ inch thick slices and place on platter
4.      Combine bread crumbs, 2 tablespoons Parmesan cheese and pepper in separate dish
5.      Dip tofu pieces in cold water and then dip in bread crumb mixture coating on both sides and place in medium skillet over medium heat
6.      Brown tofu until crisp on each side
7.      Place thin layer of sauce in 8x8 dish and transfer tofu slices from skillet onto sauce
8.      Spoon remaining sauce over tofu and top with shredded mozzarella and remaining 3 tablespoons of parmesan cheese
9.      Bake for 20 minutes

HEART HEALTHY RECIPE (LUNCH): VEGETARIAN CHILI

·         1 (12 ounce) package burger style soy crumbles
·         2 (15 ounce) cans black beans, drained and rinsed
·         3 (15 ounce) cans dark red kidney beans, drained and rinsed
·         1 cup water
·         1 (29 ounce) can diced tomatoes
·         1 (12 ounce) can low sodium v-8 tomato juice
·         3 large onions, chopped
·         4½ TBSP chili powder
·         1½ TBSP ground cumin
·         1 TBSP garlic powder
·         2 bay leaves
·         1½ tsp. kosher salt
·         ½ tsp. black pepper


1.      In a large pot, combine all ingredients
2.      Bring to a simmer and cook for 1 hour
3.      Remove bay leaves and serve
