HEART HEALTHY RECIPE (DINNER): SWEET N' SOUR CHICKEN

·         4 (4 ounce) boneless, skinless chicken breast
·         ⅔ cup water
·         ⅓ cup sugar
·         ¼ cup cider vinegar
·         ¾ cup lite soy sauce
·         1 red bell pepper, cut into 1 inch pieces
·         1 green pepper, cut into 1 inch pieces
·         2 TBSP cornstarch
·         3 TBSP cold water

1.      Place chicken breasts in a 9 inch baking dish and set aside
2.      In a saucepan, bring the water, sugar, vinegar and soy sauce to a boil, stirring constantly
3.      Add peppers and return to a boil
4.      Combine cornstarch and cold water until smooth; gradually stir into pepper mixture
5.      Bring to a boil and cook and stir for 1-2 minutes or until thickened
6.      Pour sauce over chicken
7.      Bake uncovered at 350˚ for 20 to 25 minutes or until chicken juices run clear, turning once

Serving size:  1 chicken breast with ½ cup sauce
