Garlicky
Mashed Potatoes
5 large unpeeled garlic cloves
1 c. skim milk
1 T. extra-virgin olive oil
1 tsp. freshly ground pepper
3 tsp. chives
Place the potatoes and the garlic
cloves in a medium saucepan and cover with cold water. Bring to a boil over high heat, and reduce
the heat to medium. Simmer until the
potatoes are tender, about 45 minutes.
Drain the potatoes and garlic, reserving ½ cup of the cooking
liquid.
Peel the potatoes and squeeze the garlic
cloves from their skins. Mash the
potatoes and garlic with a potato masher or electric mixer. Beat in the milk, reserved potato water and
olive oil. Season with pepper and
sprinkle with chives.
