HEART HEALTHY RECIPE (LUNCH): EGGLESS EGG SALAD

·         12 ounces tofu firm silken
·         3 TBSP light Miracle Whip
·         ¼ tsp. honey
·         ⅛ tsp. salt
·         ¼ tsp. turmeric
·         2 TBSP sweet relish
·         2 TBSP scallions
·         2 TBSP celery
·         ⅛ tsp. black pepper


1.      Place tofu in a small bowl and mash with a fork
2.      In medium bowl combine Miracle Whip with the remainder of the ingredients and mix well
3.      Pour Miracle Whip mixture over the tofu and mix well
4.      Chill 30 minutes and serve
