HEART HEALTHY RECIPE (BREAKFAST): CORNBREAD BREAKFAST MUFFIN

·         3 cups cornbread muffin mix (Arrowhead Mills)
·         1 egg
·         3 TBSP honey
·         3 TBSP canola oil
·         1 1/3 cups water
·         3.4 cup soy sausage crumbles
·         1 tsp. osemary
·         1 cup 2% cheddar cheese and fat free cheddar cheese mixed together
·         Cooking spray


1.      Mix egg, honey, canola oil and water together in mixing bowl
2.      Stir in soy crumbles, rosemary and cheese
3.      Add cornbread mix and stir lightly until moistened
4.      Spray muffin pan with cooking spray
5.      Pour batter into muffin pan
6.      Bake in a preheated 375˚ oven for 12-15 minutes or until done
