HEART HEALTHY RECIPE (LUNCH): VEGETARIAN CHILI

·         1 (12 ounce) package burger style soy crumbles
·         2 (15 ounce) cans black beans, drained and rinsed
·         3 (15 ounce) cans dark red kidney beans, drained and rinsed
·         1 cup water
·         1 (29 ounce) can diced tomatoes
·         1 (12 ounce) can low sodium v-8 tomato juice
·         3 large onions, chopped
·         4½ TBSP chili powder
·         1½ TBSP ground cumin
·         1 TBSP garlic powder
·         2 bay leaves
·         1½ tsp. kosher salt
·         ½ tsp. black pepper


1.      In a large pot, combine all ingredients
2.      Bring to a simmer and cook for 1 hour
3.      Remove bay leaves and serve

  1. In this recipe, the photo shows yellow and green things (corn and peppers?). However no green or yellow vegetables are listed in the ingredients.
