French Toast

tsp. vanilla extract
¼
tsp cinnamon
Dash
nutmeg
6 slices
firm-textured thinly sliced bread
Vegetable
oil spray
Place all ingredients
except vegetable oil spray and bread in an 8x8-inch baking pan. Stir to mix well.
Lightly spray a
nonstick skillet with vegetable oil and place over medium heat. Dip one bread slice into egg mixture and turn
gently to other side. Remove from pan
and place in preheated skillet. Cook
until brown on one side. Flip and brown
on other side. Repeat with remaining
slices of bread, spraying skillet with vegetable oil before adding next slice.
Serve with light
syrup, fruit spread or dusting of powdered sugar.
